There’s no doubt that our favorite summer appetizer is thinly sliced zucchinis fried in olive oil! They’re so scrumptious, so delicious that you’ll find yourself having a hard time trying to stop eating them!
They go very well with a glass of beer, some retsina wine or even better a glass of ouzo on ice!
Here’s the recipe:
4 medium zucchinis (thinly sliced*)
Some plain flour
esti extra virgin olive oil
Oregano
Season the flour with salt and pepper. Slice the zucchinis as thinly as possible. (*You could always use a food processor- using the fine disc). Pat the slices dry on a clean tea towel. Place the zucchini slices and flour in a plastic bag and toss. Heat the olive oil in a large frying pan and add as many slices needed to cover the pan. Fry the zucchinis on medium- high heat for 2-3 minutes until light golden. Drain on kitchen paper. Repeat with the next batch of slices.
Serve immediately and sprinkle some oregano over the zucchini slices.
