Cinnamon cookies are ideal for the cold, rainy weather of the season when we’re sipping some tea or coffee by the fireplace! They’re even more delicious when they are made with olive oil! So rich in flavor and texture!
Cinnamon cookies made with esti extra virgin olive oil
Ingredients
Yields approximately 20-25 pieces
1/2 cup esti extra virgin olive oil
1/2 cup fresh orange juice
1/2 cup sugar + more for sprinkling
20 ml dry white wine
500 gr all purpose flour (some more may be needed)
1/2 teaspoon baking soda
1/2 teaspoon baking powder
2/3 teaspoon ground cinnamon
In a bowl mix together flour, baking soda, baking powder and cinnamon.
In another large bowl mix together olive oil and sugar. Beat until sugar is dissolved. Add orange juice and wine, beat for a while gently.
Preheat oven at 170 degrees.
In the large bowl with the liquid mixture add slowly the flour (not all together) and mix with your hands gently until you get a soft dough that does not stick on your hands or the bowl surface. You may need some flour more but be careful not to add more than needed.
Let the dough rest for some minutes.
Grease an oven pan with some olive oil.
Start making your cookies into any shape you like. Place on pan and sprinkle with some sugar.
Bake for 15 minutes approximately
Let cool and remove from pan
