So easy to make, you’ll adore them!

Greek feta cheese triangle pies

Ingredients

6 sheets philo pastry

150 feta cheese

50 gr kefalotyri (can be substituted with parmesan)

2 tablespoons myzithra (can be substituted with ricotta)

1 egg beaten

1-2 tablespoons milk

Pepper

Esti extra virgin olive oil

Preheat the oven at 180 degrees

Make the filling. Crash feta cheese in a bowl with a fork. Add the rest of the two cheeses, the egg, milk and pepper. Mix well until creamy.

Open one sheet philo pastry and with a kitchen brush spread olive oil all over it. Open one more sheet over the first one and repeat the olive oil spread with the brush.

Cut the sheets into 3 lanes. Place one tablespoon of filling at the beginning of each lane, fold one corner to make a triangle and continue folding the same way –the triangle upon itself- until all sheet has been used.

Repeat with the rest of philo sheets and filling.

Line a baking tray with parchment paper and place the triangles on it. Give a good brush of olive oil on top of each triangle –that will give them the crispy texture and the perfect golden brown color.

Place in the oven and bake for 20-25 minutes.

Enjoy them warm!
