Greek style baked sardines.

Sardines, fish rich in vitamins and minerals, are probably the most popular fish in Greece. Commonly found in the Greek seas, they are fished and consumed fresh.

We usually enjoy sardines fried or baked. Baking sardines in the oven is a very easy, simple but delicious way to cook these fish. All you need is garlic, Greek oregano and esti extra virgin olive oil!

 

Baked sardines the Greek way

 

Ingredients

Yields 4

1,2 kilos fresh sardines

1 tablespoon Greek oregano

2 garlic cloves thinly sliced

1/3 cup esti extra virgin olive oil

Juice of 1 lemon

Salt

Pepper

In order to clean the sardines all you have to do is to remove the scales and intestines.

Preheat the oven at 180 degrees

In a bowl mix olive oil with lemon juice, oregano and garlic. Season with some salt and pepper.

In a baking pan lay the sardines evenly. Pour over the fish the olive oil mix.

Bake for 30-40 minutes. Exact time depends on the size of the fish.

Serve with some fine Greek Assyrtiko wine!
