Greek style cauliflower stew

Cauliflower is one of the most prominent winter vegetables. In Greece it is often served as a salad after being slightly cooked in water. There is also a very special dish, cooked mostly in winter, in which cauliflower is stewed in tomato sauce. Here’s the recipe for Greek style stewed cauliflower.

Greek style cauliflower stew

1 medium size cauliflower cut into florets

1/3 cup esti extra virgin olive oil

1 large white onion finely chopped

2 carrots cleaned and chopped into slices

1 can diced tomatoes

1 Tbs. tomato paste

1 dried laurel leaf

Salt

Pepper

Place a casserole on medium heat and add the olive oil. When it is warm enough add the onion and sauté until soft and transparent, about five minutes. Add the carrots and sauté a couple of minutes more. Add the cauliflower, tomatoes, tomato paste (dissolved in two Tbs. water) and laurel leaf, salt and pepper. Lower heat to medium-low, cover with the lid and let simmer for at least 20 minutes, until the cauliflower is tender but not overcooked
