Roasted pork is a favorite for the festive days of Christmas and New Years Day here in Greece. Roasted with rosemary in this traditional Greek way makes it an ideal main course for these festive days.
Greek style roasted pork with rosemary
Yields 4
Ingredients
1 1/2 kilos boneless pork loin roast
1/4 cup esti extra virgin olive oil
1 tablespoon fresh or dried rosemary
1 kilo small potatoes
1/2 kilo small white onions
2 carrots
salt
pepper
Preheat the oven at 200 degrees
Salt and pepper the meat. Add half of the amount of olive oil and 1/2 spoon rosemary and rub the meat. Place on oven pan and roast for 1/2 hour.
In the mean time, clean and peel potatoes, onions and carrots.
Cut the potoatoes into quarters.
Cut the onions and carrots into thick slices.
In a large bowl mix the vegetables with the remaining olive oil and rosemary. Salt (lightly) and pepper.
After the first half hour, remove the pan from the oven, place neatly round the meat, potatoes, onions and carrots. Place the pan back in the oven and let roast for 1 1/2 hours more.
When done, transfer pork to a cutting board, cut into slices and serve with the vegetables.
