It’s the ideal time of the year- somewhere between summer and autumn- to indulge into a salad with a favorite legume. Lentils are perhaps the best legumes we can use in a salad and they match perfectly with feta cheese. Add some herbs and abundant lemon juice and you’ve got the most wonderful lunch!

Sardines, fish rich in vitamins and minerals, are probably the most popular fish in Greece. Commonly found in the Greek seas, they are fished and consumed fresh.

This dish is a favorite Sunday summer dish made with our favorite summer vegetable: the eggplant! The stew can also be made with zucchinis or both vegetables and, in another version, potatoes are added as well!
Green amaranth and zucchini vegetable stew aka “vlita yiachni”
Greek cuisine is full of wild greens. One of the most popular, which we usually enjoy eating during summer, is the amaranth greens, the “vlita” as we call them here in Greece.
They can be boiled and eaten as a salad but they are also cooked with zucchini in a popular dish that is called “yiachni”. It’s sort of a vegetable stew, very healthy and very easy to make!
