Spetzofai is a rustic dish, typical of the region of Magnisia in Central-East Greece. It’s a stew made with spicy sausages and peppers and it’s an ideal dish for these cold autumn nights!
Spetzofai
Yields 4
250 gr spicy country-style pork sausages sliced
1 medium size white onion finely chopped
2 red peppers rougly chopped
2 green peppers rougly chopped
3 ripe tomatoes chopped
1 tablespoon tomato paste
salt
pepper
40 gr esti extra virgin olive oil
1 teaspoon sugar
1 glass white dry wine
some hot water
in a large saucepan heat the olive oil over medium heat. Sauté the sausages for 4-5 minutes. Add the onion and sauté for another 3-4 minutes. Add the wine and let it evaporate. Add tomatoes, peppers, sugar, salt, pepper (be modest on salt and pepper if the sausages are too spicy), tomato paste, some water-about a cup- give a stir and let simmer for at least half an hour or until the sauce thickens.
Serve while warm and enjoy with a glass of Greek red wine!
