Stuffed tomatoes is the ultimate Greek summer dish. “Yemistá” as we call them is a meal that we enjoy eating this time of the year when tomatoes are rich in flavor, juicier and much tastier. They are usually stuffed with rice and different fresh herbs and baked in the oven, that being the most popular version. There is also a version where the stuffing is a mixture of minced meat sauce and rice -that is more of a Sunday treat. Today we’ve got for you the veggie version, meaning that rice is the basic stuffing ingredient. We hope you enjoy it!

Olive Bread
Bread plays an essential role in the Greeks’ daily diet. It’s always present on our table, either being lunchtime or dinnertime. There are different types of bread made in the country, depending on the area, what type of flour is used and if yeast or leftover dough is used as a leavening agent.
Sometimes other ingredients are added to the dough, like olives, peppers or herbs. Olive bread is very popular here in Greece. It’s called “eliópsomo” and it is usually served with appetizers or salads. But it’s so tasty that it can be enjoyed on its own!
Greek veggie black eyed pea soup
As we have mentioned before, Greeks adore legumes. They are undoubtedly a staple in our cuisine. We cook them in different ways, we make soups, dips, salads, we even bake them in the oven. Plus the fact that we eat them all year around.
Greek spinach pie
Not without reason Greek pies are becoming more and more popular. They’re not only delicious and rich in taste but they are also easy to make. Amongst the most popular ones is the cheese pie, which we had presented in a previous post, and of course equally popular is the famous spinach pie, a classic Greek favorite.
Traditional Greek chickpea soup
As we have mentioned before in our blog, Greeks have a strong love for legumes. We eat them in every possible way, in soups, mashed up or even baked in the oven! Legumes are among the best protein sources and in difficult periods they used to be eaten as an alternative to meat. Greeks have never abandoned their habit of eating legumes even when times went better. It is typical of us to eat at least once a week such a dish. Legume soups are very popular this time of the year, when days get colder and dark rainy clouds cover every inch of our blue skies. Soups made from beans, lentils, chickpeas or even black-eyed peas are on our daily menu.
Back to Santorini!
A couple of posts back, we talked about the island of Santorini and we mentioned that almost every travel magazine in the world was referring to it in one way or another. But it’s not only the travel magazines that are so excited about the landmark of the Greek islands! Food magazines are fascinated with Santorini as well and not just by chance. As we have already said, the island is famous for many of its products –there is intense agricultural activity on the island thanks to its fertile volcanic soil- and the islanders are doing their best to promote the local cuisine. Delicious food made from extremely tasty goods, vegetables and fruits, meat and the freshest fish, wine of high quality etc.
