Zucchini fries with Greek yoghurt dip

On today’s new blog post we’ve got some lovely zucchini fries. Elegant but still crunchy, these zucchini fries are so delicious in their Greek flavors which are enhanced with a wonderful Greek style yoghurt dip!

For 4 medium-large zucchinis cut lengthwise into sticks 1-2 cm thick
1 cup breadcrumbs
½ cup all purpose flour
2 eggs
1 teaspoon dry oregano
1 teaspoon dry thyme
½ teaspoon paprika
Pepper
Salt
esti extra virgin olive oil
For the yoghurt dip:
250 ml Greek yoghurt
1 garlic clove finely chopped
2 tablespoons lemon juice
2 tablespoons esti extra virgin olive oil
1 teaspoon cayenne pepper
salt
2 tablespoons finely chopped fresh parsley

Place the flour on a plate. In a bowl whisk the eggs and in another bowl combine breadcrumb, oregano, thyme, salt, pepper and paprika.
In the meantime start heating the olive oil over medium heat in large frying pan.
Coat the zucchini sticks with flour, then dip them in the eggs in order to coat them completely. Finally coat them all over with the bread crumb mix.
When the oil is hot fry the zucchini sticks until golden brown.
To make the dip:
Stir well together all the ingredients. Taste in order to adjust flavors.
Serve together sticks and dip. And enjoy!
