Corfu is one of the most beautiful islands of Greece, situated in the Ionian Sea, on the North West part of Greece. Due to historical and geographical facts its cuisine has had fewer influences from the East –in contrast to other parts of the country- and more from the West, mainly Italy.
Sofrito, our new recipe, is a characteristic example of those, so called, western influences.
Sofrito
Ingredients
Yields 4
800 gr veal (or beef) meat
3 tablespoons all purpose flour
3-4 garlic cloves finely chopped
1/3 cup esti extra virgin olive oil
2 tablespoons white vinegar
500 ml beef stock
Salt
Pepper
4 tablespoons finely chopped fresh parsley
Cut the meat into thin slices and flour them on both sides.
Heat the olive oil in a skillet over medium heat. Fry the meat slices until color becomes golden brown. Pour the vinegar in the skillet. Once evaporated, add garlic and sauté for a couple of minute. Don’t let it go brown. Add stock, salt and pepper and let simmer for ½ hour or until the sauce becomes thick. Add the parsley, add salt if necessary to adjust the taste and serve immediately.
