Sofrito (Recipe from the island of Corfu)

Corfu is one of the most beautiful islands of Greece, situated in the Ionian Sea, on the North West part of Greece. Due to historical and geographical facts its cuisine has had fewer influences from the East –in contrast to other parts of the country- and more from the West, mainly Italy.

Sofrito, our new recipe, is a characteristic example of those, so called, western influences.

It’s not well known abroad but we Greeks are huge fans of pasta dishes. There are many famous dishes in our cuisine that have as their basic ingredient different types of pasta. Kleftiko

It’s Greek Orthodox Easter in a few days. And needless to say that there is no Greek Easter without lamb being roasted in every house that day!

 

Therefore, on our new post we’ve got a wonderful recipe for roasted lamb that many of us make this day but if you’re in Greece you can always find it in a good traditional tavern or a restaurant.
