Potato salads are an ideal dish for picnics or side dishes for summer barbecues. Today we bring to you the Greek version of a delicious summery potato salad!
Greek summer potato salad
Ingredients
5 medium size potatoes
1 red onion
2/3 cup esti extra-virgin olive oil
2 cloves garlic, crushed
sea salt
ground black pepper
Juice of 1 lemon
1 tablespoon Greek dried wild oregano
½ jar esti Kalamata olives pitted
On high heat place a pan 2/3 full of water. Peel the potatoes and cut into large chunks. Rinse well. Place into water and cook until tender –cooking time will depend on size and potato variety.
In the meantime combine esti olive oil with lemon juice, garlic, salt, oregano, and pepper in a small bowl and whisk.
Cut the onion into slices.
When the potatoes are ready, drain them carefully and place in a large bowl. Add the dressing, sliced onion and olives and mix gently.
Serve warm or cold and accompany with a light fruity Greek white wine.
Tip: You can add sliced spring onions, an ingredient that is very common in Greek salads.
