Chicken kapama is a traditional Greek dish, in which the meat is simmered for at least an hour in order to enhance all the flavors of the ingredients.
“Kapama” actually refers to the fact that the pot in which the meat is cooked is covered with its lid during the cooking process. Undoubtedly it’s one of the richest and most delicious dishes you can think of!
Here’s the recipe:
Chicken “kapama”
Ingredients
Yields 4
1 whole chicken cut into 8 pieces
1 large white onion finely chopped
2 garlic cloves peeled and crushed
2 cans peeled and chopped tomatoes
2 tablespoons tomato paste
1 cinnamon stick
1 teaspoon ground cinnamon
esti extra virgin olive oil
salt
pepper
Heat the olive oil in a large pot over medium-high heat. Pat dry the chicken pieces, season with salt and pepper and sprinkle with some ground cinnamon- about ½ teaspoon. Place the chicken in the pot and brown all pieces on both sides.
Remove the chicken pieces and add onion and garlic in the pot. Sauté for 3-4 minutes. Add tomatoes, tomato paste, cinnamon sticks, ground cinnamon, stir and add chicken pieces. Reduce heat to low. Cover the pan and allow to simmer for an hour. From time to time stir gently. After an hour remove the lid and allow to simmer for 20-30 minutes until the sauce has thickened.
Serve with pasta, rice or mashed potatoes.
