This cucumber salad is the ideal side dish for a weekend bbq with friends. A salad that everyone will enjoy and most likely ask for more!
Cucumber salad with Greek yogurt dressing
3 large crunchy cucumbers, thickly sliced
1 red onion thinly sliced
½ cup esti extra-virgin olive oil
1 tsp. esti balsamic vinegar
1 tsp. dried oregano
1 cup Greek yogurt (full fat)
1 Tbsp. fresh lemon juice
1 clove garlic, pressed
2 Tsp. fresh chopped dill
In a bowl, combine the onion with the vinegar. Set aside and let for 20 minutes.
Place the sliced cucumbers into a large salad bowl.
Combine the Greek yogurt with the olive oil, lemon juice, garlic, dill, oregano, salt and black pepper, and add to the cucumbers. Add the marinated onion. Toss carefully all the ingredients in the bowl. Taste for salt and pepper.
The salad can be served immediately or even better get refrigerated for 20-30 minutes before serving.
